Blackbean and Sausage Chili
Ingredients:
6 sausage, casings removed (chorizo or hot Italian)
1 red pepper, finely chopped (green will work too)
1 onion, finely chopped
2 Tb Bufalo Sauce (available at Boca Loca*)
4 Tb chili powder
1 Tb ground pasilla chili (optional - available at Boca Loca*)
1 large can chopped tomatoes (20 oz)
2 cans of black beans (16 oz)
.5 C water
Process:
In a large pot (dutch oven), fry and crumble the sausage at medium high until browned.
Add the onion and pepper and fry until tender
Add the remaining ingredients and reduce heat to slow simmer for 1 hour.
Serving suggestions:
Top with chopped green onions, grated cheese, hot sauce, salsa and/or tortilla chips
