Thai-Lime Vegetable Soup
Ingredients:
4 cloves garlic finely minced (or 2 1/2 tsp.bottled chopped garlic)
2 onions - coarsely chopped
Vegetable oil (approx 1-2 tbsp.)
4 carrots chopped
6 cups chicken broth
Coconut cream
2-3 tsp. hot chili-garlic sauce
1 each - yellow and orange pepper
3 celery stalks
1 large lime
lime juice to taste (approx. 2-3 tbsp.)
1 cup coarsely chopped fresh coriander
Process:
Cook garlic, onions and oil in large pasta pot. Stir often until onions soften (6-8 min.)
Add carrots, chicken stock, cocnut cream and chili-garlic sauce to pot with onions and garlic. Bring to boil over high heat, stirring often. Reduce heat and simmer, uncovered until carrots are almost tender (8-10 min.)
Core, seed and coarsely chop peppers. Thinly slice celery and add to soup when carrots are almost tender. Bring to a boil, then simmer uncovered, stirring often until vegetable are done as you like. Stir in juice of half the fresh lime. Add more lime juice to taste. Adjust chili sauce levels to taste. Stir in coriander. Serve and enjoy!
